In the 1990s, new owner Fabrizio Ruspoli transformed it into Marrakech’s first riad hotel, while maintaining its exceptional culinary reputation through its restaurants and highly regarded cooking school.

One of the highlights for many guests (including my wife, a keen foodie) is joining classes at La Maison Arabe’s popular cooking school, open to both hotel guests and visitors. Classes range from short sessions to week-long programmes.

In a typical class, manager Hasna welcomes participants with traditional mint tea and explains the French, Berber, and Arabic influences that define Moroccan cuisine. Led by experienced dadas (cooking teachers) like Fathia, the modern classroom features cameras and screens for easy learning. Guests prepare authentic dishes such as chicken tagine with preserved lemon and olives or fresh chickpea salad, before enjoying the fruits of their labour together.
