Aman Venice has launched The Palazzo Kitchen Table, a new dining experience designed to celebrate the seasonal excellence of the Veneto region.
The intimate, eight-seat, chef-led experience celebrates Italy’s finest seasonal ingredients through a thoughtful blend of Italian and Japanese cooking techniques that reflect the culinary vision and passions of Executive Chef Matteo Panfilio.

Set around an open teppanyaki-style counter on the ground floor within the 16th-century palazzo, the 10-course tasting menu follows a journey based on the omakase philosophy whilst paying tribute to the Veneto region by showcasing ingredients such as violet artichokes from the island of Sant’Erasmo, wild herbs from the Cavallino coastline, and fresh seafood from the Adriatic.

These ingredients are elevated through Japanese culinary techniques, including teppanyaki and yakiniku, chosen to preserve the purity and integrity of each element, and complemented by light Japanese sauces and seasonings.
The intense heat of the teppanyaki grill locks in the natural juices of the ingredients, while the yakiniku grill imparts delicate smoky notes and subtle caramelisation, creating a refined balance of richness and lightness.

To complete the experience, Aman Venice offers wine pairing drawn from the hotel’s wine list, with the additional opportunity to elevate the evening by choosing rare and prestigious wines from the hotel’s Master’s Collection.
